  • 30 grams (2 tablespoons) kosher salt
  • 20 grams (1 tablespoon) miso paste
  • 6 grams (1 tablespoon) crushed red pepper flakes
  • 6.5 grams (1 tablespoon) dry mustard powder
  • 1 teaspoon finely grated lemon zest
  • 3.5 grams (1 teaspoon) whole peppercorns (preferably white, but black will do), lightly crushed
  • 2 grams (1 teaspoon) whole cloves
  • 5 whole allspice berries
  • 2 cardamom pods
  • 2 grams (1 inch) cinnamon stick
