Turkey Stock

Description

When you roast a turkey for a big celebration, save the turkey carcass to make rich, luxurious stock.

Ingredients:

  • 1 roasted turkey carcass, including any skin and bits of meat clinging to the bones
  • 2 large yellow onions, not peeled and roughly chopped
  • 2 to 4 ribs celery, roughly chopped
  • 2 to 4 medium carrots, roughly chopped
  • 2 to 3 bay leaves
  • Turkey neck, gizzard, heart, and wing tips (optional)
  • 1/2 bunch fresh parsley, including stems (optional)
  • 1 to 12 sprigs fresh thyme, including the stems (optional)
