Spinach Frittata

Spinach frittata comes to the rescue for a fast meal any time of day.

Ingredients:

  • 9 large eggs
  • 2 tablespoons milk
  • 1/3 cup (about 1 ounce, 30g) grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground pepper
  • 2 tablespoons extra virgin olive oil
  • 1 medium onion, chopped (about 1 cup)
  • 1 large clove garlic, minced
  • 2 tablespoons chopped sun-dried tomatoes, optional
  • 8 ounces (225g) or more fresh chopped spinach (or use baby spinach)
  • 2 ounces (56g) goat cheese
