Sous Vide Sesame Chicken

If you like, you can measure out 1/3 cup of the liquid from cooking the chicken and use it in place of the chicken stock when making the sauce for this recipe.

Ingredients:

  • 1 1/2 pounds chicken breast, cubed into 1-inch pieces
  • 1 (1-inch) piece fresh ginger, thinly sliced
  • 2 cloves garlic, smashed
  • 1 tablespoon sesame oil
  • 1 tablespoon soy sauce
  • 1 tablespoon rice wine vinegar
  • 1/4 cup soy sauce
  • 1/4 cup rice wine vinegar
  • 1/3 cup honey
  • 1 tablespoon cornstarch
  • 1/3 cup chicken stock or water
  • 1 tablespoon sesame seeds
  • 2 teaspoons sesame oil
  • 1 teaspoon chili garlic sauce, optional
  • 1 ounce sesame seeds
  • 1 cup cooked white rice
  • Scallions, green parts minced, for garnish
