Smoked Spatchcocked Harissa Chicken with Carrots

A homemade harissa paste keeps this chicken flavorful and tender. Give it a good 24-hour marinade for the best results.

Ingredients:

  • 8 to 10 (10g) dried chiles de arbol
  • 2 pepper red bell peppers
  • 1 tablespoon caraway seeds
  • 1 tablespoon cumin seeds
  • 4 cloves garlic
  • 1/2 cup extra virgin olive oil, divided
  • 1 tablespoon smoked paprika
  • 1 tablespoon tomato paste
  • 1 tablespoon red wine vinegar
  • 2 tablespoons sea salt, divided
  • 1 (4 1/2- to 5 1/2 pound) whole chicken
  • 2 pounds carrots, peeled and cut in half lengthwise
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 cup chopped fresh cilantro, for garnish
