The perfect balance of tart and sweet.
Ingredients:
Cooking spray or butter, for greasing the pan
1 tablespoon plus 1 teaspoon finely grated lime zest, from 4 limes, divided
2/3 cup (160ml) fresh lime juice, from 5 to 6 limes
1 1/4 cups (250g) plus 1/3 cup (66g) granulated sugar, divided
1/2 teaspoon kosher salt, divided
1 cup (120g) plus 1/4 cup (30g) all-purpose flour, divided
6 tablespoons (85g) unsalted butter, cold and cut into 1/2-inch cubes
4 large eggs
1/3 cup (112g) raspberry jam
Powdered sugar, for dusting
Fresh raspberries
