A vibrant spring take on the Italian condiment using frozen peas.

Ingredients:

  • 1 1/2 cup frozen shelled peas (6 ounces), thawed (see recipe note)
  • 2 tablespoons shelled roasted pistachios, unsalted or lightly salted
  • 1 clove garlic
  • 1 small lemon
  • 1/2 cup Pecorino Romano cheese, finely grated
  • 1/3 cup olive oil
  • 1/4 teaspoon kosher salt, plus more to taste
