Ingredients:

  • 2 1/2 to 3 1/2 pounds beef brisket (certified kosher, if needed)
  • 1 1/2 teaspoons kosher salt, divided
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon olive oil
  • 3 medium yellow onions, sliced
  • 3 large cloves garlic, peeled
  • 1/2 cup water
  • 1/2 cup dry red wine
  • 1/4 cup ketchup
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme leaves
  • 1 teaspoon paprika
