Ingredients:
10 tablespoons (142g) unsalted butter, at room temperature, cut into 1 tablespoon pieces
3 egg yolks
1 tablespoon lemon juice
1 tablespoon water
1/4 teaspoon salt
Freshly ground black or white pepper
Pinch cayenne pepper, optional
