Hollandaise Sauce

An easy to make sauce for eggs Benedict and a lot more.

Ingredients:

  • 10 tablespoons (142g) unsalted butter, at room temperature, cut into 1 tablespoon pieces
  • 3 egg yolks
  • 1 tablespoon lemon juice
  • 1 tablespoon water
  • 1/4 teaspoon salt
  • Freshly ground black or white pepper
  • Pinch cayenne pepper, optional
