Ingredients:
4 cups water
2 1/2 cups pinhead or steel-cut oats (see recipe note)
2 teaspoons (10g) salt, divided
1 pound ground pork
1 pound ground beef (80/20 is good)
2 teaspoons poultry seasoning (see recipe note)
2 teaspoons onion powder
2 teaspoons garlic powder
1 teaspoon freshly ground white pepper (or substitute black pepper; I like a 50/50 blend of white and black)
1/4 teaspoon cayenne pepper
1/4 teaspoon ground nutmeg
4 cups low-sodium beef stock
2 bay leaves
