French Green Beans with Butter and Herbs

Look for the freshest beans at the farmers market or grocery store. They should be firm, smooth, vibrantly colored pods that snap easily when you bend them.

Ingredients:

  • 1 pound green beans (haricots verts), trimmed
  • 1/4 cup red onion, finely chopped
  • 3 tablespoons unsalted butter
  • 2 tablespoons parsley, finely chopped
  • 2 tablespoons fresh thyme leaves
  • 2 tablespoons tarragon or basil, finely chopped
