  • For the filling:

  • 6 large eggs
  • 3 cups heavy cream
  • 3/4 teaspoon kosher salt
  • 1/8 teaspoon freshly ground black pepper
  • 1 1/2 cups chopped parsley
  • 6 ounces (2 cups) grated sharp cheddar
  • 1 bunch scallions, finely sliced, including some of the green part
