Cod fish cakes with Parmesan cheese are a tasty way to use up leftover fish.

Ingredients:

  • 2 medium russet potatoes, peeled and cut into quarters
  • 1 pound cod fillets
  • 1 cup breadcrumbs
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons freshly grated Parmesan cheese
  • 2 cloves garlic, finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 eggs, lightly beaten
  • Extra virgin olive oil, or canola oil
