Classic Chicken Provencal

Description

Made with tomatoes, capers, olives, white wine, and lemon, this dish is so much more than the sum of its parts.

Ingredients:

  • 7-8 bone-in, skin-on chicken thighs
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon Herbes de Provence
  • 4 large shallots, quartered
  • 6 cloves garlic, peeled
  • 1 pint cherry tomatoes
  • 1/2 cup green olives, like Castelvetrano
  • 1 lemon, cut into eighths
  • 1 tablespoon capers
  • 4 sprigs thyme
  • 1 cup white wine, like Chardonnay
  • Rice or baguette, for serving
