Shaved Brussels sprouts with a simple homemade Caesar dressing and crunchy breadcrumbs is my go-to salad when the weather turns cold. Save time and buy store-bought shredded Brussels.
Ingredients:
2 tablespoons unsalted butter
1/2 cup panko breadcrumbs
1 teaspoon fresh lemon zest
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 pounds Brussels sprouts (see Recipe Note)
2 tablespoons roughly chopped flat parsley leaves
2 tablespoons olive oil
2 tablespoons finely grated Parmesan cheese, plus more for serving
