Shredded Brussels sprouts form the base of this crunchy salad. Topped with cranberries, toasted nuts, red onion, and tossed with maple dressing, this Brussels sprouts slaw is a winter winner.

Ingredients:

  • 1 pound Brussels sprouts, shaved
  • 1/2 medium red onion, thinly sliced
  • 1/3 cup chopped, toasted pecans
  • 1/3 cup dried cranberries
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon maple syrup
  • 1 tablespoon Dijon mustard
  • 1 medium clove garlic, minced
  • 3 tablespoons olive oil
  • Salt and pepper, to taste
