  • Lemon-Garlic Butter Sauce:
  • 1/2 cup clam juice, plus more as needed
  • 1/2 cup dry sherry
  • 1/2 cup whole milk
  • 1 tablespoon minced garlic
  • 1 tablespoon minced shallot
  • 1 bay leaf
  • 1 tablespoon unsalted butter
  • 1 tablespoon all-purpose flour
  • 1 cup unsalted butter, cut into 2-tablespoon pieces
  • 1 tablespoon lemon juice
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground white pepper
  • 2 tablespoons chopped fresh parsley
  • Fish:
  • 2 pounds lingcod fillets
  • 2 teaspoons extra virgin olive oil
  • Kosher salt
  • Freshly ground black pepper
